Coconut friend shrimp and fruit salad cooked in spiced rum.

Just a quick post today, as Rayna and I are on our way out the door to go climbing for the weekend. This is a joint post with her, since we made this together and are both claiming we came up with it. You can read her version of this here.
So, last weekend I had my daughter the entire time, eating with her is a bit of a challenge now. She doesn’t like to cook much, is a picky eater and is used to some less than desirable food when she’s not with me. She is a fan of shrimp though, so I convinced her it would be fun to cook some coconut fried shrimp (breaded with almond flour) together.
This recipe is pretty straight forward. You blend an egg or two into a bowl, spread the almond flour on a plate, and heat a large skillet with a generous amount of extra virgin coconut oil. Dip the shrimp into the egg, batter with the almond flour and gently drop it into the oil. This works really well with chicken as well. In both cases, I find it much easier to start with shrimp or chicken that are cooked before the frying, so you don’t need to worry about guessing when they’re done all the way through.
We needed something to go with it though, and she has a bit of a sweet tooth. So we took some fruit salad (strawberries, honeydew and cantaloupe) and briefly cooked it in a little coconut oil and an ounce or two of Captain Morgan.
It was amazing, so sweet that it tasted like candy. Which does make me wonder how much sugar is in the rum. I believe most of the alcohol cooks off when using it like this, but I think rum is also rather sugar intensive, most of it’s made from molasses. I’m not sure how much of the sugar from the molasses is consumed during fermentation or if there is more added to the mixture afterward. Anyone have an idea? I didn’t think about this until after the fact, so this recipe probably deserves the caveat that this is something of a high sugar cheat.

Sounds like a yummy meal. I remember captain morgans being sweet even back when I ate like crap. I would be willing to bet that sugar is added to it after.
